My good friend and her four adorable kids picked a TON of apples this Fall and generously shared some with me. Your pie is coming, friends!
FILLING STEP ONE:
Wash, peel, core and slice about 6-7 medium apples.
In my opinion, the triple-action apple machine is a necessity when baking with apples. It peels, slices and cores in seconds.
FILLING STEP TWO:
Combine the dry ingredients (find a complete list with measurements at the end of the post.) Pour the dry ingredients over the apples and combine. That’s it for the filling. Set it aside while you whip up the crust.
For this next step I rely on my Kitchen Aid stand mixer with the flat beater. It’s not necessary, but it makes “crust making” quick and easy.
I have tried many crust recipes. In my opinion, this is by far the easiest and most delicious. It’s the William Sonoma recipe (see the link at the end of the post).
CRUST STEP ONE:
Fill a small glass with ice and water and set it aside. Trust me, this will be key later.
CRUST STEP TWO:
Combine the dry ingredients and mix well.
CRUST STEP THREE:
Cube the COLD butter. It’s important that the butter stay in the fridge until you cut it and add it to the dry ingredients. Use a fork to coat the butter with flour. Then, mix until it resembles a cornmeal texture. It will take a few minutes, so don’t worry if it doesn’t happen right away….it will.
CRUST STEP FOUR:
Add 6 Tbs of the ICE COLD water and mix. When the dough resembles the photos below, form it into a ball and cut it in half. Lightly flour your countertop and rolling pin and roll one of the halves into a circle. I like to put the other half in the fridge to keep it cool and easier to work with.
Place the rolled dough in a pie plate and add the filling. Top the filling with three, thin slices of butter. Roll out the other half of the dough and place it on top of the filling. Cut four slits in the top dough and press the top and bottom edges together. Trim the excess crust and seal the edges by pressing with a fork.
You did it! Now bake it at 375 degrees for 50-60 minutes, let it cool, and make someone’s day! Eat. More. Pie.
3/4 C brown sugar
1/4 C flour
3/4 tsp cinnamon
1/4 tsp nutmeg
7 med. apples (cored, peeled and sliced)…..get that apple machine!!!
HINT: Be SURE to double the ingredients for top and bottom crusts!
